Yes, our selection of tea powder are all organic. All our producers are certified JAS (the equivalent of BIO-EU in Japan). All our products arrive in Belgium sealed and put straight into the fridge between 5° and 10°C.

The caffeine content in matcha, hojicha and genmaicha can generraly be ranked from least to the most :
Hojicha (lowest caffeine)
Our Hojicha is made from roasted older green teas leaves and stems which naturally have less caffeine. The roasting process also reduces caffeine levels. Because of this, it is a popular tea for evenings or for people seeking low caffeine drink.
Genmaicha (moderate caffeine)
Genmaicha is a blend of green tea with roasted brown rice. The rice dilutes the caffeine content. The caffeine is brought only from the proportion of green tea In our Genmaicha.
Matcha (highest caffeine)
Matcha is made from shade-grown green tea leaves. By consuming the whole leaf, you get more caffeine than infusions. Shade-growing increases caffeine levels in the leaves which brings calm and energy boost.

MATCHA FAQ

Matcha is made from a type of green tea called ‘Tencha”. Tencha leaves come from the Camelia Sinensis and has been “shaded” for at least 3-4 weeks depending on the region.
After being processed, Tencha leaves are slowly grounded into a fine powder using traditional stone mills.

Culinary matcha, which is often used and described as best for desserts and lattes, is usually made from the 3rd harvest (the least qualitative), Ryoku Matcha comes from the 1st Harvest that suits all use, drinks and culinary purposes.

The matcha grading system is not regulated and as such, we made the choice to informe consumers through tangible information (region, harvest, cultivars) in order to inform customers about the quality of our matcha.
Harvest : Higher quality matcha are only made from the 1st harvest (spring)
Cultivars : The taste and flavors of the matcha depends on the cultivars (similar to grape variety in wine)
Colors : Deep & Vibrant green are synonym of good quality matcha. The more the tea leaves are shaded the more green is the matcha
Use : Information are given about the best use of the matcha (i.e. cermeonial tea and other purposes)
HOJICHA FAQ

Hojicha is a Japanese green tea made from roasted tea leaves. This roasting process gives a brown color and a distinctive slightly woody and smoky flavor.

Using a bamboo whisk is the ideal way of preparing Hojicha. We usually recommend whisking 3g of Hojicha powder with 50ml of filtered water before adding +/- 200ml of steamed milk. You can also add a sweetener (like agave syrup, honey or sugar sirup) to compliment the taste.

GENMAICHA FAQ

Genmaicha is a Japanese green tea blend made from Sencha (for our Kome Genmaicha) or bancha leaves combined with roasted brown rice. It gives a comforting, toasty & nutty flavor.
